Sriracha Brazilian Black Bean Stew (Feijoada)
A popular dish in South America can now be brought right to your home. Here is a recipe for a delicious and healthy stew that is so easy to make. It is perfect as a main dish served well over a side of white rice. This dish typically takes a while to prepare so this is the fast version.
It is also perfect to serve all year long as it keeps well for days in the refrigerator to enjoy it for dinner one night and lunch the next. - 1/2 cup minced onion
- 1/2 cup minced green bell pepper
- 2 tablespoons chopped fresh cilantro (optional)
- 2 cloves garlic, minced
- 1 bay leaf
- 2 (15 ounce) cans black beans, drained
- ½ - 1 cup of chicken broth, or more as needed for more of a soup
- 1 teaspoon vinegar
- salt and ground black pepper to taste
- Add onion and green pepper to a pot and cook on medium heat by stirring until onion is translucent, about 5 minutes. Mix in cilantro, garlic, and bay leaf; cook and stir until flavors combine, about 1 to 2 minutes.
- Add in 2-3 Sriracha Stix (depending on flavor level desired) stir in beans, chicken broth, vinegar, salt, and pepper into the onion mixture; cover and let simmer until the flavors combine, 10 to 15 minutes. Add more chicken broth if you would like the beans to be more of a soup.
- Serve with a side salad or over white rice and enjoy!
