Stuffed Peppers With Sriracha

- 3 seasoning sticks (Seasoning Stix blends for non-spicy flavor or Classic Sriracha for spicy flavor) added into rice maker
- 4 medium sweet red peppers
- 1 can of black beans, rinsed and drained
- 1 cup shredded pepper jack cheese
- ¾ cup of salsa - red or green
- 1 small onion chopped
- ½ cup frozen corn
- 1 cup of cooked white, brown, or wild rice
- ½ teaspoon ground cumin
- Cut and discard tops from peppers; remove seeds. In a large bowl, mix beans, cheese, salsa, corn, and cumin.
- Place rice in a rice cooker - enough for 3-4 servings (may be leftovers) add Sriracha Stix or Seasoning Stix.
- Combine rice with bowl ingredients; spoon into peppers.
- Bake at 350 degrees for 30 minutes or until peppers are soft
- Optional: serve with sour cream and enjoy!
