Portabello Mushroom Bahn Mi

Ingredients

¼ cup pickled daikon radish
¼ cup cilantro
2 portabello mushroom caps
1 french baguette
2 tablespoon mayo
1 tablespoon sriracha
1 lime
1 teaspoon agave syrup/honey
1 tablespoon hoisin sauce
1 jalapeno

Directions

  1. Break the stix into little stubs and start inserting all over the mushroom from the top.
  2. Sear on high heat with oil for 2-3 minutes per side.
  3. Add in a splash of water and let steam for a minute.
  4. Set mushrooms aside and roughly chop into slices.
  5. Slice baguette in half and add olive oil and toast until lightly browned.
  6. Mix together the juice of 1/4 lime, mayo, Sriracha, and agave.
  7. Slather baguette with both sides with spicy mayo sauce, and hoisin sauce.
  8. Place mushrooms, daikon radish, sliced jalapenos and cilantro. Serve with lime wedges.
